A hearty slow cooker casserole made with seasoned halal ground beef, corn, black beans, creamy sauce, cheddar, and tater tots.

  • Total Time: 4 hours 15 minutes
  • Yield: 8 servings

Ingredients

  • 1 lb lean halal ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10.5 oz) halal-friendly condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 20 oz frozen tater tots
  • Light oil or cooking spray for the slow cooker

Instructions

  1. Brown the ground beef and diced onion in a skillet over medium heat.
  2. Break the beef into small crumbles as it cooks.
  3. Add the minced garlic during the final minute.
  4. Drain excess fat.
  5. Lightly grease the slow cooker.
  6. Transfer the beef mixture into the slow cooker.
  7. Add the corn, black beans, cream of mushroom soup, sour cream, smoked paprika, cumin, and black pepper.
  8. Stir until evenly combined.
  9. Add 1 cup of shredded cheddar and stir again.
  10. Spread the mixture into an even layer.
  11. Arrange the frozen tater tots over the top in a single layer.
  12. Cover and cook on LOW for 4–5 hours or HIGH for 2½–3 hours.
  13. Sprinkle the remaining 1/2 cup cheddar over the top during the final 20 minutes.
  14. Cover again and cook until the cheese melts.
  15. Let the casserole rest for about 10 minutes before serving.

Notes

Drain corn and beans thoroughly. Tater tots become tender rather than crispy in the slow cooker. For a crisp topping, cook them separately in the oven or air fryer and add before serving. Ground turkey can replace beef. Use halal-certified meat and packaged ingredients.
